There are 8 different grape varieties together in our vineyard. The indigenous varieties are Tempranillo, Graciano, Garnacha, Viura and Moscatel de Grano Menudo (Muscat with little berries); and the foreign varieties are Chardonnay, Merlot and Cabernet-Sauvignon.
Tempranillo: A red-wine grape with a great fineness and very aromatic. As the name (in Spanish) indicates, it is an early ripening grape. Bunches are compact and medium-big size. Berries are medium-sized, round and black-bluish coloured. Wines made from this grape have a very intense ruby colour. They are balanced, alcoholic and they’ve got a nice bouquet to liquorice, strawberries and wild fruits.
It’s our main variety of inky grapes and so, in order to improve quality, one of the grapes we have experimented most with. The Tempranillo for our wine is found in our finca Santa Cruz: Tempranillo crianza and Garnacha (Grenache) & Tempranillo for the nouveau wines. At the estate called El Secadero, in Traibuenas, we grow the vine plants to make our vintage (aged for at least three year) and gran reserva.
The resulting wines: Ochoa Garnacha&Tempranillo; Ochoa Tempranillo; Reserva and Gran Reserva.
Graciano: A red-wine grape of a sparse yield and a late budding out that provides high appreciated wines. Bunches are big, with small, rounded, and thin skin grapes, and a deep black colour. It gives to wines a bright red colour and a high acidity. They experiment a wonderful evolution during the wood and bottle ageing. Graciano wines are capable of great aroma and longevity. It is a capricious grape variety with a lot of character. From 2002 we’re testing on this variety. The first wine produced in the winery from graciano was the Graciano Garnacha and we have recently put a new wine on the market, 100 % graciano that shows the special land of La Pedrera in conjunction with the graciano’s peculiarity.
The resulting wines: Ochoa Graciano&Garnacha.
Garnacha: A high-yield red-wine grape that produces vigorous wines of great texture, body and colour. Garnacha is a very oxidant variety and so, the longevity of wines is medium-short. Bunches are compact and medium-sized. Grapes are medium, sweet, oval and dark red coloured. Garnacha wines are balanced with delicate and fruity aromas. Traditionally, Garnacha has been used in Navarre to produce fruity and pleasant rosé wines, and young red wines with a special potential.
At Bodegas Ochoa we use the garnacha variety to produce Rosado Garnacha, Rosado de Lágrima, Tinto joven Garnacha&Tempranillo, Tinto Roble Graciano Garnacha. At “El Bosque” estate in Traibuenas, we’ve got together Garnacha and Cabernet Sauvignon varieties and we make from them Rosado de Lágrima, Rosado Garnacha, Tinto Garnacha & Tempranillo and Graciano Garnacha. El Bosque is one of the most popular estates because it forms a part of the cellar’s image.
Viura: A white grape with high yields and a late budding out. It’s also known as Macabeo. Bunches are big and compact. Berries are round, big-sized, gold coloured and thin skinned. Viura-based wines are pale straw-yellow in colour with green shades, deep fruit aromas and acid-balanced.
Wines: Blanco Viura&Chardonay.
Moscatel de grano menudo (Muscat with little berries): A white grape with a big aromatic power and high sugar levels. Our plants are of medium-low vigour. Bunches are medium-sized and quite compact. Grapes are small, in the shape of ellipse and amber coloured. It is used to make late harvested sweet wines, MdO moscato de Ochoa and dry white wines. It’s one of the most special varieties. The Small berry Muscat has been in Navarre for centuries dedicated to the production of barrel-aged sweet wines. We started the R & D in our winery with this variety, producing the OCHOA Moscatel Vendimía Tardía wine, followed by the new MdO Moscato de Ochoa. The secret of our Muscat is in the land. Poor grounds with an excellent exposure to the sun, creating a special microclimate to reach the over maturation we’re looking for. The clone is also a determining factor. We make a visual selection of the most robust Muscat vineplants to obtain the most complete characterization of the Navarre small berry Muscat.
Wines: Ochoa Moscatel; MdO; Blanco Viura&Chardonay.
Chardonnay: A white grape that comes from the French region called Bourgogne. It’s considered the king of the white grapes. It has a low yield and an early budding out. Bunches are compact and small; and the grapes are small and amber in colour. It produces elegant and balanced wines, with body, high acidity and harmony. The wine is intense on the nose. It has some touches of smoke and mature fruits (apple and melon).
Produced wines: Viura Chardonnay.
Merlot: A red-wine grape that comes from Bordeaux. It is the most frequent grape variety after the Cabernet-Sauvignon. It has an early budding out. Bunches are cylindrical, medium-sized, not very thick and with blue blackish grapes. The produced wines are very aromatic and fine, recognizable for its aroma and taste to red fruits like cherry.
The Merlot variety was authorized in Navarre in 1986 and it has been well-established. Dry areas, like ours in Olite and Traibuenas, are perfect for this variety to produce an excellent quality and few kilos per hectare. As a result, wines have a high concentration; they are powerful and they’ve got a silky and pleasant structure. The wines made from this variety at Bodegas Ochoa are: Merlot Crianza, Reserva, Gran Reserva and Vendimia Seleccionada. For these wines (except for the 100 % Merlot) we use the variety blended because it provides a great complexity to the other wines.

Cabernet-Sauvignon: A red-wine grape that comes from the French Medoc. We can find it in all the continents. It doesn’t offer high yields and it is characterized by its deep and steady colour, small berries, thick skin and a late maturing. The wines are dry, with body, alcoholics, acids, and deep violet coloured. They are deep and intense on the nose; floral scent (violet), fruity (berries) and vegetable (pepper). We grow the Cabernet in two different locations: In Traibuenas, at the El Bosque estate, providing concentration and maturity and in Olite, where the most remarkable features are the elegance and power.
Wines coming from El Bosque Estate are: Rosado de Lágrima, Reserva and Gran Reserva. The wine Vendimia Seleccionada comes from the Montijo estate, in Olite.
