Dulce de Moscatel Wine
Variety: 100% Moscatel de Grano Menudo (Muscat with little berries)
Making
Our Muscat vineyard is facing south at Traibuenas estate, which allows its little berry to reach an overmaturity with the late harvest. We make a handpicking and we select the best grapes with high sugar concentration. Thus, we obtain a sweet wine characterized by its aromatic potential and an appropriate balance between sugar and acidity. After the de-stemming to remove the stems or stalks and a small crushing, the grape is moved to a pneumatic press in order to extract the free-run juice there, which after the fermentation at a low temperature and the following cold stopped, it will become Ochoa White Wine Dulce de Moscatel.
Tasting Bright golden yellow colour. Great aromatic complexity; powerful and fresh aromas, toasted hints, raisins of the Grano Menudo muscat variety. On the palate is silky, balanced and very fresh that favours its frutescent, which extends in a cheerful and long after-taste. Some hints of ripe grapes are appreciated, which increase the variety of aromas both on the nose and in the mouth.
Best served at: Cold
Gastronomy: Appetizers (foie), desserts with fruits, Cabrales cheese.

Vintage 2010 - During winter, our 143 hectares of vineyard in Traibuenas and Olite benefited from the rain accumulating enough water for the other seasons. July was cold compared to average temperatures and in August the vines benefited from a temperature jump between day and night. This helped the vines refresh during the night and avoid suffocation. This resulted in higher intensity of the colour of the grapes and thicker skins, which has helped to obtain richer phenolic substances and more structured musts. In 2010, the grapes obtained in our vineyards have arrived to the winery very healthy and mature in terms of phenolic ripeness and sugar/acidity ripeness. In terms of quality, it has been a very good year thanks to the low yields and the climatology. Then, the 2010 vintage can be defined as a “design vintage” given the fact that each parcel could be harvested at its optimum ripeness level, both phenolic and sugar/acidity. This has been able to achieve thanks to the quality and healthiness of the grapes.
