1992 was a turning point in the history of Bodegas Ochoa because in order to modernize the productive facilities of the cellar, we started the repairs of the winemaking bay which is located in the outskirts of Olite since the end of 1980 (where you can still find us).

Currently, we own different joined bays where we have the transformation, storage, ageing and wine bottling equipments, and where we process about 1.000.000 kilos of grapes yearly that produce 600.000 bottles per year. It is a fully automated process with a personal touch of the 14 people that give humanity to our wines.

The moment for the harvest is different for each vineyard depending on the best maturity level for its variety. Our stainless steel tanks, with different capacities, allow us to make wines by plots, making easier the control over each wine. Fermentations are made under a controlled temperature, with long macerations and frequent pumping-overs in order to take the colour, aromas and flavour of our grapes.

Each variety ages in a specific type of 225 litres and medium toasting oak barrel. Tempranillo and Cabernet-Sauvignon are aged in American oak barrels and Merlot in French oak. They remain ageing for at least one year. The tasting and the daily control will determine their total time. 

Our wine cellar keeps the strictest standards of traceability because we make a rigorous control of the whole wine making process that begins at the vineyard and goes on with the entrance of the grape to the cellar; it continues with the making, maturing and ageing and finishes with the bottling, storage and delivering. The system keeps all the physicochemical and organoleptic analysis of each batch and thus, we can know the evolution of the wine during the process. At the same time, we control all the elements of the packing and commercialization of the wine, checking the quality requirements established for each of them and also managing and evaluating the suppliers.

The making of wine is composed of little stories. That’s why it’s essential to pamper even to the smallest details.
